We prefer to process and bottle wine as "single vineyard" whenever possible, but may blend as needed or appropriate with other vineyards.
We strive for wine that is individual and reflects the site in which it was grown. We believe in non intrusive winemaking and a hands off approach in the winery. The best wines from the Santa Cruz Mountains are a reflection of the unique location and the 150 years of winemaking experience carried on by winemakers with old world roots in Italy and France. We want to uphold that tradition and mixture of old and new world.
We currently offer two alternatives for winemaking.
Commercial quantities are processed through Crushpad Custom Crush in San Francisco. They provide complete state-of-the-art winemaking equipment and storage. We work with the staff at Crushpad and oversee and participate in all winemaking activities.
Crushpad offers complete end-to-end service, from the moment grapes enter the facility until finished bottles are ready for storage and sale.
For non-commercial quantities, we offer winemaking under the Home-winemakers Exemption. This allows households to process up to 200 gallons per person per year. We have all the necessary equipment to process these small lots of grapes in our home, including stainless steel fermentation tanks, wine press, and aging facilities.
In addition we can broker the sale of excess grapes to other wineries in the area. We have good relationships with several area winemakers who regularly buy fruit from the Santa Cruz Mountains.
In the Spring of 2006 we will announce the name of our new wine label and begin to offer wine for sale under that label on a commercial basis.
